There are many aspects to Search Engine Optimisation

1) Building your website pages in such away that its content reflect's the words someone might type into a search engine to find your site.  For our example “The Christchurch Online Shop” who sell Blue Widgets, it would be important to ensure 'Blue Widgets' is mentioned within the pages text a number of times.  It would also be useful to have the words "Online Shop" added as this would help people who search for online shops find the site.

The more words used in your content that reflect the keywords indicates relevance and authority to Search Engines.

2) Adding good descriptive titles, descriptions, and keywords.

Our example would have a title of "The Christchurch Online Shop", a Descripiton of "Suppliers of Blue Widgets - The Christchurch Online Shop", and keywords of "Christchurch, online shop, blue widgets, christchurch widgets . . . "

3) Creating underlying structures that inform major search engines how your site is arranged and what pages you wish them to record.  Search engines don't automatically find sites, it is important to notify them that your site is available.

4) Building links to your website. Getting other websites to link to you is like a referral.

Not all links are equal. A referral link from a website with a high Page Ranking is much more important than many links from low ranked pages.
